Objectives |
|
There are many natural or artificial materials and microorganisms in the environment, which may be harmful to our health, such as food additives, metal ions, chemical materials released by industrial activities, and bacteria. This course aims at learning the basic methods of detecting and measuring those materials in the food and the water.

Outline |
|
The purpose of this course is to learn the techniques of measuring the quantity of (1) the organic materials, (2) the food additives and preservatives, and (3) the metal ions present in the various foods by using the LC- and GC-MS, the photoelectric spectroscopy and the atomic absorption spectroscopy, and for measuring (4) the toxicity of the chemical materials in the water by means of the algae bioassay and detecting (5) the bacteria and bacteriophages in the water.
