Course Description

The presence of traditional food culture is expanding as the core of regional agricultural and economic activities, such as the policy promoting tourism in recent years. In this class, we will focus on the UNESCO intangible cultural heritage “Washoku, traditional dietary cultures of the Japanese, notably for the celebration of New Year,” and learn about the history and cultural background of various Japanese food and confectionery cultures. Through this one-year class, you will gain knowledge about Japanese food culture and the agriculture that supports it, as well as examine the relationship between a sustainable society and food culture.
